One Ingredient Ice Cream

I was pretty skeptical when I saw this post on 'Our Best Bites' blog, but thought I'd give it a try. The only ingredient..........BANANAS! And actually, it's pretty delicious! So here's what you do: Cut up as many bananas as you want (make sure they are a little over ripe), and stick them in a ziploc and put in freezer. When you're ready to eat ice cream, just place the bananas in a food processor or a blender. We used our vita mix and it worked great. It comes out like soft serve ice cream, if you want it to be a harder consistency just stick it in the freezer for a little while. We like to add nutella, peanut butter, or even strawberries to it. Sure it's not one ingredient anymore, but it's SO good! And the best part, my kids think they are getting treated with ice cream! Sneaky sneaky!!

Easy Peasy Pancakes


We ran out of pancake mix so we had to find one online, lucky for us...it was delicious! We added sliced bananas to each pancake when it was on the griddle. We like to add blueberries sometimes and to make it extra pretty, sprinkle a little powdered sugar over them.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Directions

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Chili's Salsa


I don't know what it is about Chili's salsa, but I love it! I usually just like really chunky salsa's, but this one makes me have second thoughts about that.

It tastes pretty close to the real thing! 1 (14 1/2 ounce) can tomatoes and green chilies 1 (14 1/2 ounce) can whole canned tomatoes (plus the juice) 2-3 teaspoons jalapenos (canned,diced, not pickled) 1/4 cup yellow onion (diced) 1/2-3/4 teaspoon garlic salt 1/2 teaspoon cumin 1/4 teaspoon sugar
  • In food processor place jalapenos and onions.
  • 2 Process for just a few seconds.
  • 3 Add both cans of tomatoes, salt, sugar, and cumin.
  • 4 Process all ingredients until well blended but do not puree.
  • 5 Place in covered container and chill.
  • 6 A couple of hours of chilling will help blend and enrich the flavor.
  • 7 Serve with your favorite thin corn tortilla chips
